I used couscous for awhile while adding some weight. I'm not sure of the exact GI, but I never noticed any huge perceived spikes in my insulin levels (dizzying, sudden fatigue) and I was eating it three times a day.
As you said, ridiculously easy to make; I just boiled a pot of water, removed the pot from heat, poured the couscous in, let sit for 5 minutes, and ate. One thing though...just like anything else that becomes a staple in a BB diet...you're going to have to find ways to get very creative with it. I finally had to move on because I got so sick of it; it made me gag to even take another bite, no matter what I used to change the flavor, texture, etc.
