Diet question?

I have a question about what kind of foods to eat at night, I'm a shift worker and do 12 hour shifts. I work from 8 to 8 night or day, 2 week rotations. My question is what/how much carbs to eat at night. It is not a real physical job. Right now I have a 10 egg white omelet twice a day, 1 cup rice/1 cup veg/6 ounce protein 3 times a day, and 1 cup oatmeal with protein powder. Drink 1 to 2 gallons a day of water. I eat like this everyday even at night. Can anyone give me some ideas.

It's hard to find fault with your nutrition as set forth above which is very clean.  Is it white rice that you're consuming?

Yes it is white rice, I have heard that their is no difference? I was thinking about changing the rice to oatmeal for two meals and then have rice for one meal. This will only happen on night shift, what do you think?

I recall hearing that brown rice has a lower glycemic index rating than white rice, I would double check that on the web.  Like I said, there's little to find fault with.  Maybe substitute a vegetable for rice to give you some more fiber and lower GI carbs.
