Fish recipes?

Hey guys I'm curious as to how you cook your fish. I've been cooking mine in a pan with lemon pepper and butter and can't seem to get rid of that "fish" taste but when I go to a restaurant, I've never had fishy fish before. How do you guys prep your fish? Now I can fry the hell outta some fish but, I don't want to always be eating fried fish when it's not the best choice in all things.

Ahi Tuna Marinade:

2 - 1 to 1 /12 inch thick Ahi Tuna Steaks

Marinade:
1 cup soy sauce
2 cloves minced garlic
1/2 c. fresh lemon juice
Salt and pepper to taste

Combine marinade ingredients and marinate the steaks for 1/2 hour turning to coat.

Spray both sides of tuna w/Pam just before grilling.

Grill 2 1/2 min. per side for medium rare.

Let me explain something.  That "fish taste" comes from old fish.  Fresh fish really has no smell and tastes relatively mild, except for maybe Monk fish.  Get yourself some seriously fresh fish and you will avoid that taste.

Honestly, if you don't like fish, don't eat it.  Get protein from beef, chicken , eggs and pork.  Take fish oils to supplement the fatty acids.

NO I LOVE to eat fish, it's just I can't cook it for shit. I think your'e right though, I need to find out how old the fish is and wether or not it was kept frozen the entire time it was shipped, etc. Great suggestion. I didn't think of that which is stupid of me as much cooking as I like to watch on TV.

i take a slab of salmon put in on a square of tin foil sprinkle salt & pepper, some dill ( or a fresh sprig if i have) mince up garlic clove ,dice up green onions then when all done slice a lemon and place slices over the top and wrap leaving some room for expansion and bake at 450 for 20 mins or so mmmmmmm
