its a really simple question Pole, he can only do one or the other, let me break it down for your simple mind:
option 1: if he can lift the rock, then he has failed to make a rock so heavy it was unliftable.
option 2: if he succeeds in making a rock so heavy it cant be lifted, then it would mean he himself would be unable to lift it. therefore he cannot do anything because both arent possible at once. what part do you not understand?

I suggest you read Ronald Nash's book, The Concept of God.  It's a short book that deals with these sorts of illogical questions concerning omnipotence.  God's other omni's are examined as well.

Yes he can. But as soon as he's created it, he'll be able to pick it up

Which means he did create the stone that he couldn't lift, and which also means that nothing (lifting the stone) is beyond him
