Hey, what would you put in a Mango Salsa to go on salmon?  Red onion...tomato...lime juice?

mostly i use red onion, maybe some shallot, lime juice, julliened basil, and some red pepper flakes, and/or finely diced red bell pepper.  How are you making the salmon?

I have no fresh basil but I think I have a yellow bell pepper unless it has rotted in my fridge :-\

I will probably sear the salmon in a pan.

that will work too.  I generally use red.green,yellow bells for the color contrast.  i like the pepper flakes to add some spice since the mango can be very sweet.  generally i pan sear my salmon with olive oil, and will add fresh dill.  Or make a dill and lemon caper sauce.

    *  2 cups chopped pitted peeled mango
    * 1 cup chopped red bell pepper
    * 2/3 cup chopped green onions
    * 1/4 cup chopped fresh cilantro
    * 2 tablespoons fresh lime juice
    * 4 teaspoons olive oil

I've been getting a lot of fresh salmon lately (ie: caught the day before).  Usually I just squeeze some lemon on it and then sprinkle with dill, thyme, and rosemary and grill it.  Turns out pretty good.

Really simple, but the type of maple syrup makes a big difference.
The stuff you buy in the stores just doesn't cut it, it has been diluted bigtime.

You need to track down some that is being sold by the grower.
It is sort of like drinking a $10 bottle of wine or a $200 bottle.

The recipe (better write this down) lol

BBQ grill the fish and brush on the maple syrup like you would BBQ sauce...
that's it, but God it is ever good.

i assume that she brushes it on close to when it is down so that the sugar doesn't burn.  I also like to dip salmon in a mixture of soy sauce, terriyaki sauce, with red pepper flakes and some honey.

brush it on just prior to removing it.  Just leave it on long enough for the syrup to carmalize a little.
I turn the far side burner on high, brush the syrup on, close the lid and count to 30.
Flip the fish, brush again and count to 15. 

Then consume it in front on the neighbors cat  ;D

I am going to have to try it on chicken tonight, since Stella won't let Migs go so I can't get a hot sauce recipe from the HotLanta Latino Hottie.

I usually just buy a jar of "whatever" brand and only use salsa as a dip.

I was thinking more of a sauce like you find on chicken wings.
Everytime I try and make a hot sauce it seems to lose flavour the hotter it gets

I want something "burn twice" hot with lots of flavour.

i'll have to dig out my habanero salsa.  has those thai chili, tomatoe, pepper, salt, serrano chiles and jalepenos

it is good and hot! you can leave it chunky or blend it smooth.  how are you applying it?  i generally will brush my wings a few minutes before they are done, then toss them with more sauce after taking them out

I have never tried tossin the chicken in the sauce after.
Also I don't use wings, only cut up breasts, with no skin. 
Could that be the problem?

not a huge salmon fan, so not sure about using the maple syrup...i'm ify with salmon and have to be in the mood for it. Unless it is sushi, then no problem at all.
