There is nothing wrong with a good properly cured salami, the only things that may bother some folks is the amount of nitrates used in them and the nutritional profile that is usually 1/1 protein/fat.
You might be thinking of the cheaper grades of sausage and hot dogs that were allowed cheaper filler meats. The grades of filler meats is a little problem in many cheap protein sources.
