I make pretty good fried chicken but True Adonis is much better.  It's a Southern Dish so it's a common in these parts

Popeyes is one of the best Fried Chickens.  Wylie Dufresne spent a LOOOOOOOOOONG time reverse engineering it and I have made the recipe.  Identical.

I marinate mine in Texas Pete hot sauce overnight, coat it with flour, salt, and pepper and deep fry it in peanut oil....skin on of course

No, was a former pro wrestler and promoter.  Concessions is really where the money is made and most venue have very little space so you have to improvise.  Fastest money cow was pizza by the slice, popcorn, hot dogs, candy and can drinks.  Fast, easy, cheap, and quick.   One Turbo Oven can cook 3 whole pizzas in 4 minutes, Hot dogs can be roasted in the over, placed in bun, and foil wrapped under a heating lamp, popcorn can be popped from a machine, and the rest is pre-packaged.


Get the fuckers in, get their grub, and get them seating.  Clean-up isn't bad

I disagree, it cost way more for pre-cooked chicken than to just make it yourself and it would be fresher, crispier, and juicier.
