Dogs dont act, they are just themselves.

every single dog I have had has had a unique personality.

Dogs aren't the same at all. Even the same bread can grow to be different depending on the circumstances of growing up. I've seen it again and again and again until I got tired and accepted it.
As for humans, whoever try to customize your behaviour in a way, fuck him. When the state wants you to act in a certain way, it's an authoritarian one and you gotta, through your whole life, defend your self and the way you behave and think.

Different people having lived in vastly different environments, over long periods of time, would be subject to different conditions and stressors.

This is obvious when you look at Eskimos compared to Nigerians. Both reflect their environment to a large degree and are different. Pretending these traits are only physical and have nothing to do with cognition is ignorant.
