I think most of them do.  My friend on the East coast participates in drug trials all the time.  You just have to take some medication, sometimes you are just taking a placebo, and stay at the location for a few hours for testing.  I think he said they pay a couple hundred dollars if you are there all day and they feed you whatever you want.
