How long are eggs good for?

      I have a dozen eggs that expire today, June 6. I was going to hard-boil them, and keep them for snacks between meals. How long will they be good for in the fridge once they are hard-boiled?
      Also, would it make a difference if you boiled them say 2 weeks before they are due to expire? Or once they are cooked, there is a certain time for which they are good, regardless of the date on the carton?

The egg will continue to be fresh for at least another 2-3 weeks if it has been refrigerated from the time packed until used at 45 degrees F. or lower. Older eggs are great to use when hard-cooking (boiled) as they will peel easier. They will keep for about a week in the shell, 2-3 weeks if peeled and placed in a freezer bag.

I used to pay attention to the code, but I go thru them so fast, I just go by the exp. date.

"The day of the year that the eggs are processed and placed into the carton must also be shown on each carton with the USDA grade shield.  The number is a three-digit code that represents the consecutive day of the year.  For example, January 1 is shown as "001" and December 31 as "365."  Typically, eggs are packed within 1 to 7 days of being laid.  The pack date in this example is "218", meaning that the eggs were packed on the 218th day of the year, or in this example, August 5.  If your carton shows a USDA grade shield, you can determine the date that the eggs were packed from the carton date code"

Yup, just like milk will stay fresh up to a week and a half after the expiration date.  If you notice on packaging there is either a sell by/best used buy date or an expiration date.  the recommndation on deli meat is 4 days after purchase.  but we all know that deli meat lasts longer.
