here are a few recipes that i have.  Let me know if any of it looks familiar:

4 cups sweet corn
1/2 cut green bell pepper, chopped
1/2 cup red bell pepper, chopped
1 onion, chopped
1 garlic clove, finely chopped
1 chili pepper, seeded and finely chopped
1/2 cup Cheddar cheese, grated
1/2 cup Monterey Jack cheese, grated
4 eggs, slightly beaten
1/2 cup cream

Preheat oven to 375 degrees

In a shallow baking dish, combine the green pepper, red pepper, onion and garlic. Mix well.

Add the chili pepper and cheese. Stir in the eggs and cream. Bake for 1 hour until the casserole is set at 375 degrees.

OR

1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package Jiffy corn muffin mix
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar

Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

OR

1 can whole kernel corn, drained
1 can creamed corn
2 eggs, beaten
1 box Jiffy corn muffin mix
1 stick butter, melted (or 1/2 c. oil)
1 c. sour cream
1/4 - 1/2 tsp. garlic powder (opt.)
Shredded cheese (opt.)

Mix all ingredients except cheese. Sprinkle shredded cheese on top, if desired. Bake in casserole dish or 9"x13" baking dish for 30 to 45 minutes or until fully cooked in center.

Miggly, ...in the first recipe, ...when do you add the corn? ya hafta add the corn don't you?  :o

oops first step sorry about that.  basically everything goes in the first step, then the chili pepper and chesse etc.

Hmmm....That corn casserole sounds interesting.  I should give it a try.

First thing I do on Thanksgiving day, put the turkey in the oven and go to the gym.

Collard greens
Baked Macaroni and Cheese
Candied yams
Yorkshire pudding
Dessert is a cherry cheesecake and chocolate cake

Damn, I need some Beaujolis Neauvau and cranberry wine...

i start some of the dinner prep the day before. I'll make the cranberry sauce (yup from scratch, its easy), most of my cut work is done then too.

Hmmmm... what do you put in yours? I usually throw in pecans or blueberries/apples... with allspice, cinnamon, and nutmeg. I tried to cut down on the sugar one year.  Everyone looked like this  :-X while they were eating.

i generally use the whole cranberrys, some sugar but will cut it with splenda to lower the sugar content.  Then add oj (another reason to lower the sugar)  then a lil bit of black pepper, orange peel ad grand marnier.  i cook it down unitl it gets nice and thick and leave some whole berries in there.  like the texture better than a smooth sauce.

i agree the texture is much better.  i put it near the end, sometimes i'll flambee it other times i'll let it simmer to cook out the alcohol.  as for the amout depends on which family members are coming lol.. actually i tdo it to taste, start witha shot and go from there.

yeah when thanksgiving comes around i have all the burners going the oven  and the grill.  it's fun.

thanks for the recipe migs...the 2nd on is the right one.  uuummmmm I hope I can make it like I remember it as a kid.  I am so excited to cook this year...I got all new pots, pans, and baking pans as wedding gifts.  So I have everything I need!!  I know it sounds stupid, but its a big deal to me.  I enjoy cooking...I just need all the right stuff.

cool glad i could help.  anytime you need help let me know.  I literaly have a thousand recipes from when i was in the biz.  Are you kidding me, i have a restaurant supply store near me, i go there everyonce in a while to just stare at stuff, lol.  I'm trying to find a le creuset 5.5 quart port, but they are $$$
