Beef and Guinness Stew
“He hoped there would be stew for dinner, turnips and carrots and bruised potatoes and fat mutton pieces to be ladled out in thick peppered flour-fattened sauce. ‘Stuff it into you,’ his belly counseled him.”
- James Joyce, A Portrait of the Artist as a Young Man
Ingredients (makes 5 or 6 portions)
- 2.2 lbs diced beef
- Cupful (8 oz) diced onion
- Cupful (8 oz) diced celery
- Cupful (8 oz) diced leek
- Cupful (8 oz) diced carrot
- Pinch mixed herbs
- Knob (spoonful) of butter
- 8 ½ cups beef demi-glace (local supermarket)
- Seasoning
- 1 can of Guinness Draught
Directions
In a big pot, brown the beef in the butter for about 5 minutes. Add the vegetables and cook it for another 5 minutes. Then, add the mixed herbs, seasonings (salt and pepper) and the demi-glace. Cover it with the lid, and cook it for 90 minutes.
When finished cooking, stir in the Guinness. They also recommend serving this with “champ potato, roast carrot and parsnip.”
