my turkey day menu so far goes like this:
Cheese and fruit course: Manchego, herbed goat cheese, baby blue, and a brie. caramelized figs, strawberries and grapes
Smoked salmon tray with diced red onion, chopped egg, capers and olive oil
Salad: endive and mesculin with spiced almonds and mustard vinaigrette
Stuffing/dressing: mixed between french and cornbread with herbs and roasted pine nuts
Brined turkey: cavity stuffed with lemon, leeks, carrots, celery, garlic, onion and might throw in an apple
Cranberry sauce: not sure how I will make it this year
Roasted garlic mashed potatoes
French green beans sauteed with olive oil cracked pepper and sea salt
Dessert will probably be pumpkin pie, apple pie, bread pudding. Homemade whipped cream.
I'm skipping the soup course this year. Last year I did a pumpkin soup with a cinnamon and nutmeg spiced creme fraiche and garnised with micro-greens. I've done chestnut soup and butternut squash and red bell pepper before too. This year it's in the 70's here so not really soup kind of weather. I'll do a soup for Christmas. Not sure which yet. Any ideas? Maybe a carrot soup or a bisque.
