You are correct with that Hulk is the strongest but uncontrollable though, so Thor is more valuable to the team on a day to day basis.

Loki and the Skrulls are the rumored villians.  Witihn Thor they showed a superquick glimpse of the the Infinity Gauntlet in the weapons/trophy hall of Asgard which means Thanos could be in the picture at some point.  Regardless, awesome.

They did it in the animated Ultimate Avengers, which was actually pretty good. But yes, comics and movies are 2 different mediums and there's no sense in the movies being a carbon copy of the comics.
