They consider it from time to time.
The biggest thing against it is the time and effort to do it at an Olympic level.
Olympic Weight Lifting is considered a long and boring sport by the IOC, especially now that everything is so televised. Weightlifting only gets a set number of lifters and scheduling times, so they try to limit the weight classes to keep everything moving fast and still somewhat competitive, even if that means some lifters get treated unfairly.
Also with the the weight class changes, you get weird things happening, like gaint super competitive classes on one end and boring lightly competitive classes one the other. This tends to happen more on the women's side. I doubt with the Olympic coverage at stake they want to play with it too much.
Lastly, They have reshuffled the weight class a few times in the last couple of decades, and with each change many of the old records are forgotten about, essentially thrown away. It's a double edged sword, because on the one hand it allows them to to say to the IOC, etc..... that the sport is exciting and watchable, it creates a lot of hurt feelings among many because they feel it cheapens the sport.
