When I lived in Texas, I didn't run into many stereotypical "Texans". At least not in Houston. Outside the city the accent's started showing up.. but most of the people outside Houston were fairly friendly. Inside the city was a little different.
Houston is very different from the rest of Texas. Get 100 miles outside of Houston and the heyhaw comes out for sure. I went to a very country school and i bet 60% of the boys drove old Chevy/Ford/Dodge trucks with lift kits and glass pack mufflers. Many had those bolted down campers in the bed like the old school ranchers used.
Downtown Houston is ghetto as hell and all thugged out these days. A lot of rich white/asian/indian people here as well due to the powerful economy and energy sector.
Most "country" people are very friendly, but you get a few crazy rednecks every now and again.
