As soon as they are outed, they get a hyphenated name.

Sometimes, when the mother gets remarried, the kids get the hyphenated last name and it sticks.

Yea that is one of the signs of dangerous patients in my MEDICAL practice:

1.  IF ANYONE OVER THE AGE OF 20 COMES INTO THE OFFICE WITH MOMMY AND DADDY THAT INDICATES A DANGEROUS PATIENT.

2.  IF YOU EXAMINE OR EVALUATE ANY FEMALE PATIENT, NO MATTER WHAT AGE WITH A HYPENATED LAST NAME, THAT INDICATES A DANGEROUS PATIENT.
AGREED FOR MALES WITH HYPHENATED LAST NAMES-- THEY ARE GAY AND DANGEROUS.

3.  IF YOU EVALUATE ANYONE OVER THE AGE OF 30 WHO HAS NOT ESTABLISHED A MEANINGFUL RELATIONSHIP WITH SOMEONE OR SOMETHING  (VIBRATOR Huh)  THAT INDICATES A DANGEROUS PATIENT.

dangerous= whining and interested in suing your ass and winning the lotto.

In Britain it's usually because the wifes family is well known and wealthy. Very common in England between wealthy snobbish bastards.
You are not taking your wife's name, you are taking on her family's powerful name to give you most social standing and more door opening ability.

For example Bonham-Carter
Kennedy-Onassis  I guess was created so Jackie Kennedy could remind the world she was once a Kennedy just in case everyone forgot.

No, you are still taking on your wife's name. No matter how you look at it.

The generational male name is just a public assurance of the children's paternity.  If accuracy is paramount the kids should probably have the mother's name since there's never any doubt about who the mother is.  They say that 1 in 10 of you isn't your father's son.

when my wife and I were dating I made it clear that I would never marry her if she refused to take my name

If a woman can't make that commitment what value does her "marriage" hold?
