First off, why are you assuming those who have not been unvaccinated have automatically gotten Covid-19?
You're conflating unvaccinated with COVID recovered person. These groups are not necessarily mutually exclusive, but they are not the same group.
Also, vaccinated people can still get COVID.

It's ultimately only a study of 275 people. That's not the worst sample size I've seen - but it's pretty bad.

IQ is an exceedingly stable personality trait over a person's lifespan. It is a trait that very seldom changes short of an individual receiving blunt trauma to the head - brain damage, basically.
Very few things are known to change IQ once a person is born, aside from breastfeeding, as one example I can name - and probably the only one I can think of, under North American conditions.
In Africa, the Flynn Effect is an example of IQ "improving" - but that involves Africans literally starving to death, improving their IQ scores once those extreme deleterious conditions are removed.
There are many African ethnicities that have average IQ scores around 70, who would have an IQ averages closer to 80, if they were raised under North American conditions, or if conditions improve in their African nations, potentially as a result of development of the region decreasing the total number of people living on under $2 USD per day, which I believe is the current global standard to measure extreme poverty [what used to be $1 USD per day around 25 years ago].
I think Israel would be a good example to see if this study holds, since Jews have the most IQ to lose, so as a "percentage" of IQ loss, you'd see a clearer picture.
But I don't know...I've heard of this "brain fog" from "long covid", but has any of this been established scientifically yet in the literature?

Carnegie Mellon University did a study assessing vaccine hesitancy across educational levels. According to the study, what’s the educational level with the most vaccine hesitancy? Ph.D. level! Those can't all have been awarded to liberal arts majors. Clearly, scientists who can read the data and assess risk are among the least likely to take the mRNA vaccines.

You might want to re-read the article. It is about cognitive ability following being ill with COVID. Apparently the sicker you are, the greater the loss. Nowhere did I see where they tied this to folks being unvaccinated.
Where the article fails IMO is in that being seriously ill and hospitalized for longer periods of time have a huge negative effect on people regardless of why they were there. Not sure how long after the illness these people were assessed, but a week or two in the hospital can take months to recover from mentally and physically.

Obviously it's just one study and more research needs to be done, but it does suggest that long term side effects can be present in those "fully recovered" from COVID. This is bad news.
Has COVID been around long enough to call the side effects from it long-term? And while we're talking about what is considered long-term, medical science hasn't had enough time to determine the possible long-term effects of the COVID vaccines.

I agree with this one. From the people i know only let's say "less intelligent ones" didn't get vaccinated. I don't say that the only thing you should do to stay healthy, but that's still priority these days. In our family we all take special vitamins from canadian pharmacy (https://www.canadapharmacy.com/) and try to keep a healthy lifestyle in general.

It is not about someone's intelligence. Intelligent people have differing opinions and beliefs.
I am reasonably intelligent, but that had very little to do with why I made the decision to be vaccinated for COVID. When you read the stats, most of the people dying from COVID are in my age group. It simply seemed the less risky choice. So far this has been a good decision for me. With each vaccination I had mild nausea the next day and nothing more.
