Title: Mushrooms

Making mushroom / asparagus risotto tonight I was thinking about all the different mushroom varieties.  When I make risotto, I usually use a mix of shitake, portabello and cremini.  Not a big fan of the basic white button, nor any of them raw, but cooked...  YUMMMM !  I think I've missed the morels season  :'(

Any fans here?  Great source of nutrition  :D

I like sauteed mushrooms in my omelettes and with steaks.
Morels are fairly pricey. My Mum & Dad used to have them growing in the field behind their house, and Dad used to pick tons of the things. Deeeelish!!

I soak portabellos in a mix of soy and maple syrup for about 30 minutes, then I grill them.  So good!  I even love making Portabello cheesesteaks when I don't want to eat meat.

The best mushrooms I ever saw were at the food market in SF at the Ferry building.  These guys have every kind of fresh mushroom you can think of.  Every top chef was walking out with boxes of the most unique mushrooms.
