Thank you for this post. I have never heard of vegetarian beef wellington before now. I see that there is quite a variety of recipes available for this online, including vegan wellington. My daughter is a vegetarian, so it is good to learn about new and different vegetarian dishes. I enjoy fixing a variety of vegetarian meals she will enjoy on special occasions, such as Christmas dinner. What is your recipe for vegetarian beef wellington?

I really enjoy vegetarian cooking. It's certainly something that people find strange to learn about me in real life, and it obviously invites harmless piss-taking from my friends, but, truth be told, it is the greatest thing I've ever done.

A lot of the vegetarian dishes are so well made now that I don't often even have to make them from scratch. There's great-tasting wellington, steak-substitute pies, and Quorn meatballs in supermarkets now, and I buy these whenever I'm home. However, for Christmas, I like to make my chestnut and blue cheese pie (or wellington/parcel, etc.).

Puff pastry
A good blue cheese
Onion
Garlic
Whole chestnuts
Veg stock
Cream
Salt/pepper

I just use the store-bought pastry as it's quicker. I fry the chopped onion and 2 garlic cloves on a low heat. Chop up the packet of chestnuts and throw it in. Add a little veg stock, crumble in the blue cheese, then thicken with cream. Season to taste. Once that's all nicely done and thickened, I spoon it on to the pastry parcels/ add to the pie dish then bake. Everyone I've fed it to says they love it (they might be lying pricks, of course, but I think it tastes great).

My partner also insists I do the roast potatoes every year. I use the method of boiling them almost to death beforehand. Cool them down, then cover them in a big helping of olive/veg oil mix and roast on a high heat. To season, I fry some rosemary until it's crispy, chop it up, and mix it with a lot of salt and some garlic powder. This gets coated on the spuds when they come out the oven.

Phantom Spunker:
Little Wing blew my mind when I first heard it as a child listening to my father's vinyl, and it still does today. It's an incredible piece of music that inspires many artists. I love these two particular interpretations of Hendrix's compositions.
