the few globs you see are fage (full fat), lemon juice, sherry vinegar, and a little olive oil.  pretty tasty!

I dunno, as long as you season them with salt and pepper, and pan fry in a little oil, they should taste okay.  Beyond that, I would try:

1.  Squeeze lemon and sprinkle some chopped cilantro over them.  Try adding minced and crushed garlic (1 clove or so per fillet).
2.  "Battering" them with a little paprika, salt, pepper, flour and frying in butter.  It's not "unhealthy", you can bread coat them with a very small amount of flour (1-2 tbsp, 30-60 cals).
3.  Dipping them in aioli.  Just mix mayonnaise with a little diced and crushed garlic (about 1 clove per 2-4 tbsp) and a little lemon juice.  A tablespoon of mayo is under 100 calories and can nicely flavor a fillet.
4.  Marinate them with soy sauce, lime juice, a sliced chili, and a little brown sugar or non-caloric sweetener.  You can also add minced garlic and ginger, or replace the soy sauce with fish sauce.

The options are endless really... just some random ideas based on stuff I've liked in the past.  Don't be afraid to try "unhealthy" things... a little sauce can go a long way.  Measure if it makes you feel better... you'll see you can get a lot of flavor out of a few calories.

To put it another way, the difference between a little sauce and no sauce is way bigger than a little sauce and a lot of sauce.

Lastly, there's more to a dish than flavor.  Lots of things can make a dish more or less satisfying overall, including what you pair it with, how well you cook it (overcooking kills how palatable a dish is), etc.  Vegetables often have more flavor than meat, so instead of skipping the side dish, roast up some asparagus with a little salt, pepper, and olive oil.  Takes 5 minutes extra, at most, and can make you forget all about a bland fish.

imitation chipotle-style burrito

i'm particularly proud of this one because:

1.  it turned out as good as a real chipotle burrito, imo
2.  didn't use any recipes, aside from a glance at a tortilla recipe
3.  made great use of time and ingredients
4.  this was a goal of mine for a long time

unfortunately, i didn't get great pictures (sloppy presentation), as i was rushing to get everything assembled.  didn't have a big enough pan to make large tortillas either, so had to settle for tacos instead of burritos.  and somehow the camera got flipped to hdr...
