The Western is a surprisingly rich genre. The Wild Bunch is certainly the deepest psychological treatment of what we think of as "the code of the cowboy" - in addition to its breakthroughs in the cinematic portrayal of violence. From everything I've read, the collected oeuvre of John Ford might achieve an accumulated supremacy.
But for me, this discussion begins and ends with Sergio Leone's Once Upon A Time In The West.
