I have a huge log of goat cheese.

Anyone have a good recipe for a goat cheese superbowl snack?

Stuff Medjool dates with goat cheese and sprinkle with chopped up glazed walnuts/pecans.  Incredible  :-*

When I bought the log I bought 2 lbs of Medjool dates for .98 cents :D


Princess, what do you think you think is the best presentation?  Cut the dates in half lengthwise, remove pit and stuff each half?

I thought Super Bowl snacks for you Americans was meant to be chips, dip and beer.
Maybe a rare beef on rye with gurgan and mustard sandwich.

This seems more a figure skating kinda snack.

1/3 cup soft goat cheese
16 Medjool dates, pitted
16 large basil leaves
4 wide, thin slices prosciutto di Parma, each cut into 4 long strips
16 toothpicks, soaked in water 10 minutes
 
Heat broiler to low. Spoon 1 teaspoon cheese into each date; wrap with a basil leaf, then a prosciutto strip. Secure with a toothpick. Broil until cheese bubbles, about 3 minutes. Serve warm.



Might try this one too but maybe omit the basil leaves?

OK I just tried the proscuitto recipe both with and w/o the basil.  Very good either way!


Bought the glazed walnuts and pecans too..may have those also

i generally take the goat cheese and roll it over dried basil, oregano, thyme, red pepper flakes, black pepper and a touch of kosher salt.  Easier if you put the herbs on a piece of parchment or wax paper then use it to roll the cheese.  Another thing I like is to cut a nice piece of bread, Brioche, hallah etc, then put a slice of cheese on it then bake it until it gets heated through.  It's a little stinky but good.  Also like to use that as a cruton for a variation i have for french onion sout that has a touch of sherry as well as a mushroom trifolate.

DAMN!  You got a deal  ;D

Just partially split them open with a small paring knife and pop out the pit.  Then stuff with a small amt of cheese - so it kinda looks like a mini stuffed potato.  Then lightly sprinkle with the walnuts or "dip" (press) them into the walnuts.  Serve on a pretty white plate.  They go lovely with wine  ;D.  About 2 bites each and I figure about 100 calories each  :o, but dang they're good!  Lots of fiber  ;D which offsets the calories.  Yah, that's it  ;)

P.S.  You'll have A LOT of remaining cheese, so you can do your other appetizer.  Personally, I wouldn't do the log  :-\  I have a "thing" about communal food  :-X

Princess, yeah, I'm dipping into the log to make the individuals.  Just ate a couple more samples.  Thank goodness for the offsetting fiber!!
