Bake or Microwave sweet potato until done.
Smash up some goat cheese and cottage cheese into the potato. Microwave to heat/melt the cheese if needed. Add cracked black pepper and eat it up yum!

Ha! That's what's so great about cheese. You pair it with anything and you get instant WIN. I could not live in a world without cheese. :)

Cut up in chunks - or wedges like the picture - toss in a plastic bag with some olive oil - lay out on a baking sheet in a single layer - sprinkle (very lightly) with sea salt or garlic salt - roast @ 400-425 for about 20-25 min

will try tonight.

That is a shame! Maybe cream cheese?

that could work... I probably should have paid more attention to culinary matters growing up as my mother is probably the best cook I know, she would make sweet potatoes all the time but the way she made them they tasted almost like dessert. she also makes a mean sweet potato puree, roughly the same consistency as mashed potatoes. always a crowd favorite at holiday dinners..

Unless a potaoto is boiled in a pot of water and served with a six pack an Irishman would have no idea there are other ways to cook potatoes.

Dude, his idea of a gourmet meal is a loaf of bread and a can of soup...
-
Sweet potatoes also higher in potassium, which is not necessarily a good thing.
-
With butter, I'll go with regular; without, sweet.

Depends on your goal. For the average drinker 2 potatoes per 24 beers is enough but for the out an out alcoholic who needs more energy for battering wives etc 5-6 potatoes with 48 beers is the norm. A light warmup of whiskey is recommended. Stretching before hand is also a good idea.

I love sweet potatoes, I can eat them everday no problem...regular potatoes not so much, 2 days in a row and I'm already sick of them.
-
Sweet Potatoes do not spike up your blood sugar as the white ones do, much better for you. Pretty much any white flour, rice or potatoes will raise your blood sugar just like candy would.

Not an issue if you eat them with protein, fat or fiber. It slows down the digestion.
