When increasing carbs. You have to chose from different sources. I chose starchy carbs because they make you full and help exercise.
Potatoes: High Cadmium! WARNING
Rice: High Arsenic! WARNING
Oats: Moderate Cadmium
Cornmeal: Semi low Cadmium
Quinoa: Unknown, but not so easy to digest.
I try to mix all of them, except potatoes that are just so toxic, so that you then receive smaller amounts of different poisons, rather than huge amount of one poison.
What would you do?
What other starch sources are there?

I don't think its a big deal. If you're really that worried about it why not just peel the potatoes first, eat them a few months, and then get a test for your Cadmium levels? If they aren't high then you know you don't have to worry.

We are really constrained to just a few choices by nature. To bad evolution didn't give us more starch sources to pick from. It's a pretty scary planet.

Humans didn't evolve eating carbs in any significant amount unless they were fermented to reduce the toxicity. Rye bread for example. But even then, it was a case of fermented carbs filling up calories in the diet for poorer people.
Somehow in the last 100 years marketers have convinced middle class people that eating peasant foods is healthy. Every instagram foodie is showing off bowls of grains, nuts, seeds as though it isn't modern toxic crap sold at huge markups.
