I need help coming up with a diet plan for my 18 year old cousin

He's 5'8", 18, 130 lbs and just now starting to bodybuild.  I know you guys usually help the pros and hardcore enthusiasts, but he has never tried bodybuilding before (in the sense of the total diet and exercise experience) and is very interested.  So I know you all had your first day in the gym whenever that was so if you could help with some ideas that would be great.  I could go to a different site more oriented for beginners but I don't want any ding dong answers so I came here.  I have been throwing a lot his way.  

I basically told him eat about 3000 calories a day in 6 meals and gave him some meal ideas.  He isn't satisfied with my answer I think he needs more detail or more assurance that eating 3000 calories a day and a ton of protein is good.  He's also worried he'll just get fat.  He said "i dont want to just get bigger but i also want it so that my muscles show".  I guess he is going for that hollister / abercrombie model / brad pitt type look like all the young guys seem to be trying for.  Anyway do you guys think 3000 calories is about right for him?  Can he do cardio every day or will he not grow muscle as fast as he would have if he didn't?  I think he is having trouble seeing the forest for the trees.  I told him to bust his ass in the gym eat a lot and cut back or do more cardio if he starts getting fat.  I also gave him meal ideas out of the sticky bulk / cut thread.  I didn't really want to get into bulk/cut cycle philosophy with him but maybe it would be best if he pretends he's in a bulk cycle and going to cut at some point.  Hit me with some advice and if you have time to type up meal plans that would be awesome as well.

he's 5'8 and 130?  3000 calories for him with working out hardcore may be too little.  5000 would be more realistic if he wants to gain good lean size providing he is eating clean.
I can tell he is skin and bones but you got a pic of the kid?

Standard bulking protocol is 15-20 cals per lb of bodyweight.  Since he's just starting out, he's not going to be lifting "hardcore"  ::) even if he believes he is.  He should probably start out on the lower end of calories and work up from there if he's worried about "getting fat".  Advise him not to over-do it on the lifting ~ his tendons, ligaments, muscles aren't ready for extreme loads.

Breakfast
1. quart whole milk
2. large steak
3. 6 boiled eggs
5 thick pieces buttered toast
6. 4 more glasses milk
7. bowl of soup
8. 2 bowls pudding

Mid-Morning snack
1. 4 quarts whole milk
2. 6 bananas
3. 6 oranges or peaches
4. 6 tins tomatoe juice

Lunch
Fish and chips (or another steak) + all the trimmings

Mid-afternoon Snack
More Milk and fruit

Dinner
Another steak or 2 large tins of spaghetti

Bedtime snack
2 large hamburgers and more milk
