Yes, everything starts to sag. It is the skin and perhaps connective tissue, as well as gyno/man boobs? Look at Michael Douglas in his latest movie "Behind the candelabra", about Liberace. It looks like somebody hanged a size xxl skin on a medium size person.
The decline vs incline press thing- I dont know. You need to also go with exercises that does not hurt your shoulders as you age. My shoulders ( I am 44) can handle decline presses very well, and when I do flat benches, I arch my back and squeeze my shoulder blades together. I actually set an all time personal record on the flat bench a couple of months ago and I have been training since my 20s, so strength does not go as of yet. But the skin starts to sag and man boobs are lurking. It's depressing. But I think having a muscular chest is better than being skinny with sagging skin. So declines are better than no presses at all.

agree, like you im 44 training since my 20's, when you hit your 40's your body changes so i jumped on the peds when i was 42, these have really helped my physique, picked my chest up infact and brought my shoulders back. can only do decline with the bar due shoulder injury use mainly hammer strength machines and cable machines for most now as i feel it takes the pressure off certain areas. not interested in lifting heavy weights, an operation on my lower back and a tendon release in my left elbow put paid to all that, 3-4 plates my limit but i do a few drop sets to get the stimulation, plus i move the weight a lot slower now, more precise and always squeeze when at maximum contraction, stimulate not annihilate, train with intelligence. let the young'uns lift the heavy weights.
regarding dorian, i saw him at bodypower this year and he is in great condition, the photo of him with wife by the pool is how he looks now, not the first set of pics with branch warren.
