the old lady just fixed me some Chicken Spedini and it was every bit as good as Mama Campisi's, should have gotten a pic of it but it's gone. :P

she makes it with a prociutto/Mozzarella cheese roll thing from Trader Joe's, she pounds the chicken breast until it's about a half inch thick rolls the piece of ham and Mozza in the breast and holds it together with toothpicks, then she breads it wit Italian bread crumbs and fries it with white wine, minced garlic and sliced mushrooms and some baby spinach, excellent.

Sounds good.
This summer when i was in Napoli i tried real Italian Mozarella. Best cheese i ever tasted.
After i finished the meal i realised i had just eaten 900 calories of fat alone in the meal. :)

Yes! First I slathered on Brewmaster's Mustard....then coated with Panko crumbs mixed w/thyme, rosemary, parsley, garlic, olive oil, salt and pepper.

Well, they used to market it as "the other white meat" but it's not really like chicken.
Have you ever had shredded BBQ Beef? Shredded BBQ pork tenderloin tastes pretty similar, but the way I prepared it above doesn't taste like beef. You should give pork tenderloin a try some time!

I found out that the tripe dish I liked , had the tripe cooked in a pressure cooker ???
I thought those things were dangerous , so I won't be cooking any myself that way !!

You should try Sam Nagji....it's Korean...live, squirming octopus...you down in tentacles and all and feel its suckers on your throat. I couldn't do it to be honest. I tried though. I prefer things dead before eating them.
