If I make a teriyaki marinade with a lot of brown sugar, does the chicken absorb many calories/carbs or does it mainly just absorb the flavor?

It's not a dumb question, because the reality is that marinade does increase the carb/calorie total, but not by enough to matter.  I don't advise slopping on any more after it's done cooking, though. 

If you're in contest prep mode, though, stick to the low- or no-sugar varieties.

If your really that worried about any extra calories? After it's marinated rinse it under cold water before you cook it.

what about soaking a yellowfin tuna steak in water for about 15mins?  i did that to defrost it but didnt know there was a hole in the bag, so the actual meat was submerged in the water and some of the colour came off into the water

If your really that worried about any extra calories? After it's marinated rinse it under cold water before you cook it.

Or if he is really paranoid, he could count the calories of the marinade to his total.  This will give him a slight benefit of an artificial caloric deficit.

If you are "offseason", poke the chicken with a big giant fork, marinate it for about 30 minutes, then hello mr. grill!

If dieting, microwave/bake the chicken with a lil' Ms Dash (whatever flavor you like).  No marinating....hope this helps. :)

I've studied in Vietnam, China, Japan, and just studied with the King of Thailands Chefs in January. Was raised by a Korean, my Aunt. Plan on studying in Cambodia at the end of the year.
