Cook large batches or chicken, beef, pork and potatoes/rice, make meals into tupperware and put them in a freezer. It's really easy, large batches of meat are easy to make in the oven and spuds/rice simply by boiling, takes 0 effort, also night before your going to work take your "next morning meals out to defrost" and if you want them to taste "fresh" take some pickled veggies with you to work and some sauces...

Easy Chicken Boobies
1 Reynolds Cooking Bag (not the turkey size - the smaller roast size)
6 Chicken Breasts
Marinade of your choice (about 1 cup)
Throw the boobs in the bag with the marinade. Squish. Cut a few slits in bag.
Put in/on cooking dish/tray and bake about 45 mins @ 350. DO NOT OVER COOK Tender & juicy - no mess.
I haven't made this recipe in a hundred years, but when I did, everyone loved it ~ even the tuna haters. There's a ton of room for tweeking to your nutritional needs (ie; more tuna, less rice, less cheese, more eggs, remove the yolks...)
Tuna Muffinettes
2 C cooked rice
2 cans tuna
1/2 C shredded cheese (chedder)
chopped black olives (optional)
Chopped onions to taste
1 T parsley flakes
1 t season salt
2 beaten eggs
2 T milk
Combine all ingredients
Put into greased muffin tins and bake @375 for 15 mins.
Serve with a lemon butter sauce drizzled on
(little melted butter, some lemon juice, season salt and parsley)

This is what I do - although all my chicken and rice meals are put in the fridge and left in there for whenever I need them - the cooked food will keep for up to four days so I'm only cooking in bulk twice a week - Wednesdays and Saturdays.

They really are, even tho the recipe doesn't look like much (IMO). The lemon butter really makes a big difference.

Nothing beats a steamer for preparing vegetables and even baked potatoes.......and you can cook fairly large amounts of veggies and potatoes in a steamer......takes all of an hour to steam these foods.
Lean ground beef can be cooked on a stove in 10 minutes.
Green Beans can be prepared on the stove as well.......or even in the microwave and then stored in the refrigerator.
Cooking really doesn't take long once you get in a routine.

yea those tuna muffinettes sound great except for the cheese part..I may try that this week.
Also, I do the same with turkey meatloaf and just put them in muffin tins..Portion control and last for the week. I just usually cook all protein on monday and usually lasts until Saturday.

Probably will need more egg to hold them together. Maybe 2 whole egg and 2 more whites.
Just put the damn cheese in them!

At least put cheese in for your child! She deserves to enjoy one of life's finer delicacies!
Oh yah, non-stick spray for sure even if the pan is non-stick.

Oh I always make 2 different trays if the recipe calls for cheese, i.e. enchiladas, baked ziti (I like ricotta cheese). Please she likes feta in her salad and will eat me out of house and home for string cheese..(ewww I threw up in my mouth a little)

3-6 months for just about anything ~ some stuff up to a year. Freezing potatoes :-\ ??? :-\ assuming cooked, probably wouldn't end up with a favorable result (watery). Careful w/rice ~ it could get freezer burn really easily.

Cooked proteins and casserole type stuff like lasagna or meatloaf should be fine for 3 months. Other stuff, like vegetables, rice, potatoes, etc would also be fine, but certainly wouldn't taste as good. Just make sure you're using storage containers and bags meant for the freezer and remove as much air as possible before freezing. Personally, I'd freeze the "sides" separately.
