Definitely hog head cheese. smothered fried squirrels are probably second. Southerners will eat a lot of nasty stuff( coons and possums) but I wouldn't try that stuff.
I absolutely love oysters and live in an area where they harvest them. They are great right off the boat when we don't receive much rainfall and they are salty. I prefer them raw also.
