Increasing the ration of brown sugar or using only brown sugar will ensure they stay soft for days to come. Brown sugar is VERY Hygroscopic and meaning it draws in water more easily from the air. Therefore cookies made with brown sugar will absorb moisture from the atmosphere and soften on standing after baked and never harden.

Why does Brown sugar get harder than a brick?
The thin coating of moisture in the molasses on each grain of sugar in brown sugar evaporates if exposed to air for too long, thus making it glue like. Molasses is very hygroscopic and wants to hold on to water and it will soften right back up when exposed to moisture.
Proper storage will cause it never to firm up or what I do is just use so much of it, it never has a prayer of ever getting to that stage.
