Other guy was Russell Crowe from memory, can't imagine Crowe having the dedication to keep the body for so many movies

I believe it was Dougray Scott actually (villain from Mission Impossible 2 with manlet Tom Cruise).
He looks pretty similar to Huge JackedMan.

You're right, I should have added that. Its interesting watching each movie that follows, from X2 to the most recent.
TBH, Jackman still looked pretty good in the first movie if we're comparing him to the average man on the street.
It's kind of funny though watching these actors who at one time you thought were "huge", looking a lot less impressive when you look back now.

As you said, still really good compared to the average guy and an improvement from the first movie. Just not as impressive in retrospect, especially compared to the conditioning he does these days.

Good decision on Hollywoods part. Great actor and draws more then just the comic geeks which equals more money. Deviating is not always bad. He fits the role well, IMO.
