Hey How is the stepper? I typically do running.  My wife keeps challenging me to do this with her. She doesn't think I can do HIIT on that thing for 30 mins. 
Steppers are great.  I used do to the cross trainer religiously but one busy day when they were all taken I jumped on the stepper, since hardly anyone ever uses it.  I was like damn this is tougher than it looks, certainly tougher than the cross trainer, so I usually use the stepper for my cardio at the minute.

Seriously? I'm a cardio fanatic, it's changed my physique a lot, but the running is getting hard on my knees. What was your strategy when doing this?  HIIT or just a steady pace for a set time?

Depends on your goals. If you wanna get healthier, hop on a bike and go all out. If your a serious strength trainee and trying to get as big and strong as possible riding a bike will only hurt your progress and recovery.   Cardio needs to be done right. 30-45 minutes  tops keeping the heart rate between 120 and 130 bpm.

That was the form of cardio I used when I competed .
I used the original stair master and 20-30 min was a great workout

These "pissing contests" on the best form of  cardio is silly and ego driven.

Looky here, the deal is to get moving, get your heart going for awhile and avoid injury.

That SOB kicks my ASS!!!  Nothing else like it. Even 20 minutes on that is harder than 30 on the treadmill

Basically low intensity cardio keeping your heart rate under 150 bmp  causes an adaptation where your left ventricle stretches and gets wider. The intensity is just high enough to  where the blood can remain in there long enough to actually stretch  out  the heart walls. The result is a more efficient heart and  improved recovery between workouts. With HIT the heart is working so hard to pump blood in and out that you don't get this adaptation, your only left with the heart wall getting thicker.  Which is great for health and all but has no benefit to a guy training for strength.

For a weekend warrior trying to bench 315 that plays pickup basketball on the weekends sure, my advice is for the  serious guys. Guys benching double bodyweight and pulling triple bodyweight already  who've been stuck at the same lifts for years.
