What is the best exercise to really focus on the part of the tri that is exposed during a rear double pose ?

The problem is that you've circled all 3 areas of the tris. I'll assume you mean the middle part that shows cuts. That would be the medial & lateral heads. Bench dips, dip machine, CG benches, pushdowns, pushdowns with a rope attachment, close-grip pushups, etc.

A very low bodyfat and some diuretics

Mike said it best. For the rest of us, might try the bent arm pullover & press and dips (weighted) with the elbows glued to the sides and the body somewhat straight up. No leaning forward. Let the triceps handle most of the work load, not he pecs or delts. The "V" bar is an excellent piece of equipment for this also. Your triceps will  not only look impressive when posing but also outstanding when the arms are relaxed and just hanging down at the sides. Good luck.

I never mean to offend anyone but if you want contest-carved triceps (any muscle for that matter) you need to get rid of the bodyfat and the water. 

I rarely do isolation movements on my tris becuase it just bothers my elbows.  I stick to close grip pushups (medicine ball maybe), bench press, dips and the occasional overhead dumbell extension.

tris for some people take years and years to develop. personally ive always had all three heads showing from the day i touched a wieght. but yea i agree u dont need isolation work to get fully developed tris...
