Make a face cut halfway through the tree in the direction you want it to fall,and then a back cut.

How do you install these things? I'm cutting some TALL douglas firs, these aren't some little Apple trees.

First time on my life I am 100% agree with the Falcon. I never see this coming, but  in this matter he obviously has some experience. I have seen how complete amateurs use their non existent skills to cut the trees, and there is no way in hell that could be going like it goes in the movies. That's why amateurs use a. hired pro or b. chains and pulleys.  If you have a lot of trees, and you don't want cut them all but spare some, you should know excatly how they fall. Pro can see that, but you can't even imagine how many variations there is between that and view in your eyes. You don't want in to situation, where you have cutting the tree and it doesn't fall, because of other trees, or it doesn't fall all the way but hangs by branches. To prevent all this shit, amateurs use chains and pulleys. It can save your life. Furthermore, if you are first time using chain saw, there is many things which could go wrong. That's why wise guy use the precautionarys and don't loose a limb. You have to understand that most of these wankers want you to fail, so they can see in the news how your guts hangs in the trees.
