Hummus
« on: November 14, 2006, 08:30:11 AM »
..yes, that's right HUMMUS.  I've only recently tried this stuff, and damn does it taste great!  I'm wondering if anybody knows how much fat this stuff usually contains.  I hear there's usually some olive oil added to the chick pea puree, so as long as it isn't too much then at least the fats are the 'good' kind.

Of course the white pita bread you dip into it can't be that healthy in certain regards, but man....Hummus is awesome!  Protein from the chick peas, healthy fats...slap that on some whole wheat pita and you've got what I'd consider a great bodybuilding food.

And speaking of Middle Eastern foods, does anybody know about the dietary make up of falafel?  They're vegetarian, and I'm sure as long as they're not deep fried they'd also fit into a healthy diet.  Anybody know more about it?  It tastes great too, specially with some hummus for dipping.

hummus is incredible, put it on some Triscuits from time to time and it's great, they carry about 10 different flavors at a store near me.

Yes, hummus is great!  Try making "mock" deviled eggs - get rid of the yolk and fill the white with the hummus.  Making your own is easy.  Just put the drained (reserve the juice)  chick peas in a food processor with some of the juice, lemon juice, pepper, olive oil and a dash of hot pepper sauce (like tobassco) and maybe a little salt.  I like to add roasted red peppers to the blend.  Yummy...

..Princess, how much olive oil do you usually add to your recipe?...I'm concerned about making a pre-contest version of hummus, or at least the version that has the lowest fat but still some good taste!

Can you give us your exact recipe, please?

I pretty much cook like my grandmother did ~ a pinch of this and a dash of that...
But in the interest of my fellow Getbiggers, I just made a batch and paid attention to quantities.

So here goes...

1 15oz can garbonzo/chick peas (drained with juice reserved)
~about 1/4 cup of that juice added back
The juice of 1/2 lemon (about ~3 tablespoons)
1 tablespoon extra virgin olive oil
a few cranks of fresh cracked pepper
a few dashes salt
1 clove pressed garlic (makes stinkey breath  :P )
1 small roasted red bell pepper

Whipped to desired consistancy in food processor.
It will be tastey (ier) tomorrow  :-*

Obviously, 14g fat in the entire recipe.
Cost = ~$2.50

You're right.  That's the traditional way to make it, but everytime I buy a jar of it (and it's not cheap), it ends up expiring before I've hardly used it.  It adds a nice flavor though.

I must've revised my recipe over the years, cuz now I always add a few drops of hot pepper sauce (like Tobassco) and a few drops of sesame oil.

This is at Aldi for $1.69 and it's quite good.

I'm addicted to Clancy's brand vegetable chips available at Aldi's.
Since it's got "vegetable" in the name, I know it's healthy.

love hummus and salsa, probably the 2 healthiest condiments out there. i spread both on my turkey sandwiches! kind of messy, but damn good, healthy and filling!

i think you could probably add salsa to anything for taste and the health reasons
