Jesse Owens, Jim Brown, Bo.

Jim Thorpe's the stock answer; it was more common then to do many sports. I don't think he would've done as well playing in later eras.

Mark Spitz won 7 gold medals in a single Olympics, a feat still unmatched... setting a world record in each event.

He was 22.

This is indisputably the greatest athletic accomplishment in any sport.

Basketball is Wilt. They didnt' change the rules for jordan (although they bent them)
Baseball I'd go with Ted Williams or Ty Cobb

They were great for their time no doubt, but for baseball, as far as athleticism goes I'd have to say Cal Ripkin Jr. and Ozzy Smith!

According to you; Most don't pursue multi sports because they can't.

Spitz was impressive but it's not just a numbers criteria. 7 golds in swimming's not any more impressive than Owens' accomplishments in track, especially considering the context in 1936. And the top athletes are generally in track, not swimming, especially in '72. Owens did it in jumping events that didn't directly involve running, Spitz only swam.
