Figure Friendly NY Style Cheesecake
Crust:
• 3/4 cup graham cracker crumbs
• 1/3 cup butter
• 3 tablespoons sugar
• 1/3 teaspoon ground cinnamon
Alternate Crust:
• 1 1/2 cup ground (food processor) ginger snap cookies (about 33 think cookies)
• 3 tablespoons apricot jam melted
Filling:
• 2 cups 1% Friendship Lowfat Cottage Cheese
• 1 (8oz) lowfat package of cream cheese, softened
• 1 (8oz) regular package of cream cheese, softened
• 1 cup sugar
• 4 eggs
• 1/2 tablespoon lemon juice
• 1/2 tablespoon lemon zest (grind)
• 1 teaspoon vanilla extract
• 1/4 cup all-purpose flour
• 2 cups Friendship Light Sour Cream
Preheat oven to 325º. Combine chosen crust elements and press mixture evenly over the bottom and slightly up the sides of a 10-in. spring form pan. In a food processor, puree 1% Friendship Lowfat Cottage Cheese; set aside. In a mixing bowl, beat cream cheese and sugar. Add eggs, one at a time, beating well after each addition. Beat in lemon juice and lemon zest, vanilla, flour, Friendship Light Sour Cream and pureed cottage cheese just until evenly mixed. Pour into pan. Bake at 325ºF in the center of the oven for 60-70 minutes or until filling just set. Turn oven off, open door and let set in oven for 60 minutes. Remove sides from pan and refrigerate over night. Slice with a wet knife and serve with fresh berries.
Suggestion - Mix berries with 2 tablespoons of sugar.
