YUMMY CREPES!..............Since egg whites and oatmeal are a morning staple, you can make this recipe with the amounts of each that your diet requires. I will just use the amounts that I need to eat, to make it easier to write out, but adjust away!

1/2 cup egg substitute (or 4 egg whites, but the sub. works better)
1/4 cup oats
3 pkts Splenda, or 1 Splenda and 1/4 cup DaVinci S/F vanilla syrup
Cinnamon to taste

Mix the eggs, oats, and sweeteners in a bowl. I usually let it sit for at least 15 minutes so the eggs soak up the oats a little. This is why the egg substitute works better, because you don't have to beat it.

Pour it in a non-stick pan, and heat on the stove until the bottom is cooked. Make sure all the oats aren't on one side of the pan, just move 'em around a little to get them evenly distributed. Sprinkle cinnamon on it as the bottom cooks. Apple Pie Spice is yummy, too.

Throw the whole thing in the oven under the broiler for a few minutes (don't completely close the oven door), until the top is cooked. Slide it onto a plate, top with S/F maple syrup if your diet allows. I sometimes mix a little protein powder with a few Tbs of water and pour it on as a topping.

This can be done with a variety of flavors, too. Add a few drops of extract, like vanilla, almond, banana, or maple. The S/F DaVinci syrups come in a zillion flavors, so you can also make it fruity or nutty, or whatever you want!

The same recipe can also be poured into a muffin tin, the kind that makes 12 mini muffins. Bake at 350 for 12 minutes. These are easy to freeze, too, for a breakfast on the go.

Skillet full of has browns. Cook until they're a little burnt (IMO that's the only time they're good). Add four whole eggs & mix the whole thing together. Before putting that mess on the plate add a little cheese & hot sauce. Serve with four pieces of wheat toast & enjoy. Go into a food come for about an hour & then get on with your day.

Sunday is my "cheat" breakfast.
