Turkey Day Recipies
« on: November 20, 2007, 06:31:52 AM »
Ok Peeps.  Usually anyone who cooks for the holidays adds some of their own touches (recipies) to the dinner.  Here are a couple things I make on Turkey Day for my family.

Pumpkin Muffin Stuffing.

5 tbsp "I can't believe it's not butter"
1 fresh or dried Bay Leaf
6 ribs celery from the heart (chopped with greens)
2-3 McIntosh apples (seeded and chopped)
1 medium onion (chopped)
1 medium zucchini (chopped)
6 pumpkin muffins (crumbled)
1/2 cup seeded sunflower seeds
2 tbsp Poultry Seasoning
S & P
1 1/2 - 2 cups chicken stock

Heat a large, deep skillet over medium-high heat with "I can't believe it's not butter".  After it's melted add bay, celery, apple 1/2 of the onion and zucchini.  Season veggies ilerally with S & P and cook 10 minutes or until softened.  Remove bay leaf.  Add crumbled muffins and sunflower seeds to the pan and combine with veggies.  Season the stuffing with the poultry seasoning.  Dampen the stuffing with 1 1/2 - 2 cups stock.  Pile the stuffing into a serving dish and place in oven, just to crisp the top.  You can also just use an ice-cream scoop and scoop into cupcake pan to make individual serving stuffing muffins.

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Rasberry Cranberry Sauce
1 (3 oz) box rasberry jello
1 (8 oz) can of crushed pineapple (drained)
1/4 crushed walnuts
1 can cranberry sauce (whole or jellied)
1/4 chopped celery
1 cup rasberry or cranberry juice
1/4 cup water
Heat 1 cup juice and 1/4  cup water until it boils, add jello, stir, add cranberry sauce.  Let cool until thickened.  Stir in pineapple, walnuts and celery.  Pour into mold if you like, refrigerate until solid.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Green Beans

Green Beans
OJ
Craisins
Almond slivers

Steam green beans over orange juice.  When tender, drain add craisins and almond slivers.

HAPPY TURKEY DAY EVERYONE!!!!!!!

ok this is pretty rough on the diet but we all eat good the rest of the time anyway so...

stuffed jalepenos

about 25 whole jalepenos
2 cans of cream cheese
1 pack of bacon
tony chacheres
garlic power
tooth picks

cut the jalepenos in half long ways and deseed them, you can then soak them in hot water to make them a little less hot or not its up to you. put the cream cheese in a bowl and add garlic powder and tony's to taste. then load the inside of the jalepenos with the cream cheese and wrap a piece of bacon around each one and put a toothpick through it.( you might want to cut the bacon in half as a whole strip is alot) put on the grill or oven or stove to cook the bacon and then enjoy

youll eat so many that you wont be able to eat anything else
they're amazing ;D ;D ;D

CRANBERRY PIE...My favorite!!

2 cups clean cranberries
1/2 cup sugar
1/2 cup chopped pecans

Spray a pie/quiche dish with Pam.  Put berries in the dish, and sprinkle with sugar and pecans.

Beat 2 eggs.  Mix in:
-1 stick butter melted
-1 cup sugar
-1 cup flour
-1 tsp almond extract

Once the above is mixed well, spread it over the berry/sugar/nut mixture and cover the berries completely.
Bake at 350 for 35-40 mins until the top is slightly browned.

Serve with ice cream.   :)

By 2 cans of cream cheese do you mean 2 tubs?  Are you saying 16 oz cream cheese?

I'm personally not a bacon fan but he recipe sounds great!   :)

ya two tubs you probably wont use it all but it depends on how many jalepenos you get and what size they are...it doesnt really matter how much cream cheese you have as long as you have enough to stuff all the jalepenos, me and my friends use the rest as dip for chips...lol its not bad either...ill be up most of the night cooking a brisket and ill check in the morning so if yall have quesitons ill see if i can help out, Happy Thanksgiving

A little bit of it.

All the food I ate & the next day I weighed 1.2 pounds less. Very odd.
