If you want sales, make it taste good. People are incredibly effecient at convincing themselves that something is good for them if it tastes good.
Take "Detour."
Give that same macronutrient breakdown to most bodybuilders and they'll call it junk food.
Put it in a label as a supplement, and you're a millionaire.
If you want it to be a good food product, you're probably going to want to go the way of oat bars. I would imagine you could produce an oat based product that tasted good and could also fit into a diet of someone that's trying to eat "good."
But, then it would be primarily carb based.
A protein based bar is probably going to need to be a candy bar with a little whey added in.
