 ::) ::)

First, you have to make a small hole on the underside of the egg. Make it very small, otherwise it will crack. This way the air inside the egg can come out and prevent the egg from breaking during the boiling process.

Then, when the eggs are boiled, put them under cold water for a minute or so. This way the shell won't stick to the egg.

Start with OLD eggs - close to the expiration date (even expired are fine).  Put them in the pan and cover with cold water (just a little of the egg will not be covered).  Bring it to a boil but not a rolling boil.  Turn the temp down to a fast simmer.  Total time - 11 mins.  Remove from heat and cool down with cold water.  Don't peel until after they've been refridgerated for awhile (cold).

I think what can sometimes cause them to crack is that if you have eggs in the fridge and then put them straight in boiling, the sudden temp increase causes the shell to break. So either keep your eggs out the fridge, or just put the eggs in the water immediately (before its boiled) and let the water boil, as opposed to letting the water boil 1st, then adding the eggs to it.
No doubt about it...

I have always had PERFECT eggs by following this.....

Lay the eggs in the pan and add the  cold water till an inch or so over the eggs.
Set over high heat and bring to the boil.
remove from heat, cover the pan, and let sit exactly 17 minutes

put eggs in cold ice water for about 20 minutes

Peel them bastards

Well  :-\ that's what the "food safety experts" say.  Seems a bit over the top tho, unless we're talking about blazing heat  ::)

We talking about cooked or raw eggs sitting at room temp?  Lots of places sell unrefrigerated raw eggs which sit for days at a time and I don't mean Zimbabwe.  Australia, UK.

I buy the ones out of the fridge at the supermarket and fridge them at home.  Always gives me the willies to see a crate of eggs at a convenience store in 75-85 deg heat.  I've bought warm ones every now and then tho and never had any trouble.

Same in germany.

Eggs are ok for some weeks without refrigerating really. Better to be on the safe side though, refrigerate them and boil them long enough.

I've heard that immersing raw eggs in water can tell you how old they are since the air pocket in the fat end grows with age.  New ones lay pretty flat, older ones stand on end, and the ones you should throw away will float.

No bodybuilder's eggs ever get that old tho.

Good advince there. You can also find out if an egg is boiled or not by spinning it around. The boiled ones spin, raw egss lie down.  ;D ;D

I agree though that nothing in my fridge stays there very long.  ;D

Cool, I never knew.   :)

Wish I could say the same.  I cleaned out my fridge recently.  Why the fuck did I buy pickeled cocktail onions?  Yeah, I'm a big martini drinker.  ::)  I'm the biggest idiot I know sometimes.  ;D

i belive boiled eggs can hold most of the protein and essential nutrients in the yolk rather than having it fried or scrumbled.!!

The perfect egg...
A few years ago a fitness girl friend of mine was eating one of her many meals and offered me the hard boiled egg that she had packed extra... The egg was cooked perfect and peeled easily.  I commented that my eggs always turn out inconsistent, she made some comment not fit for posting here and laughed.  2 weeks later I get a package in the mail with a nice note from her explaining this machine is what she uses to cook her eggs.  Here is a link...

http://www.target.com/gp/search/601-3251388-8196905?field-keywords=egg+cooker&url=index%3Dtarget&ref=sr_bx_1_1

The 3rd one down is similar to the one she sent me... I still use it religiously, and it still makes PERFECT hard boiled eggs every time (it is 3 years old now).  Add the specified amount of water using cup supplied, put the eggs in the tray, put lid on, flip the switch and walk away till the buzzer goes off.
