Is it possible for the guy to shrink his jaw back to how it used to be or is the damage permanent?

I would say permanent - HGH side effects like acromegaly are non-reversible.

who's to say that the changes in Jay's jaw ain't just simply evolution of the human species (and he's just experiencing it faster than the rest of us)?
