front shoulder presses, which hit the most surface area of the shoulder? how many total sets for that body part, for me it is normally 12

i like to do 3-4 sets...and no more then 12 sets total-shoulder is a relatively small bodypart
very delicate and very easy to overtrain

I think that shoulders is the most overtrained bodypart period, and also abs, so if 12 sets work best for you great, but I would experiment with 8 sets or 10 sets, as for pressing I prefer shoulder presses with bar because you can use more weight with better control and you don't have to lose a bit of energy getting the dumbells up, this is my 2 cents :)
