If a whey powder is 80% protein by weight. What makes up the last 20% except for the few carbs, from sweetener and flavour?

yes, I imagine a cellulose like structure of the protein "fiber". The powder is just a collection of particles after all, not like some fine smoky homogeneous compound or dust for the most part. And inside these particles, who knows what is there. It could very well be a little water without making the particles any wet on the outside. Pure logic.

what about the whey protein isolates like isopure and syntrax nectar that have 0g carbs?
theres a hell of alot more than 1 gram of fat in that 'gold standard'.
