That is in fact correct grammar, even though it's becoming more prevalent to say "I" (something that grates on my nerves every time I hear it, btw).

Think about it this way--take her husband out of the sentence--would you say "Education is very important to I?"  No, that would sound stupid because it's improper grammar.  You would say, "Education is very important to me."  In the same way, in that context the correct grammar would be to say "my husband and me," not "my husband and I."

That's just basic English grammar.  So maybe the mom in the show isn't quite as dumb as you judged her to be.
