superior product to what? Real eggs? Other heat pasteurized eggwhites that I can get from my local foodservice for 1/3 the price that come in convenient quart size containers? Egg whites int. is not doing anything special, aside from marketing to "bodybuilders" in muscle mags which just means they can charge more as people will believe the glossy ad that tells them they need to pay three times as much cash for the same product.

I'm sure there's an explanation. A justification. A reason of some sort.

Maybe they're pasteurized at the exact temperature required to break down avidin. If only someone could tell us what that temperature is.
