if you could find powders it would be nice. You get a truer color IMO.  Other than that I would go with paste. This will give a deeper color.  I would use liquid if i were doing a light pastel colored icing.

My grandma used to make this all the time.  Whenever I'd visit, I wanted to bake her recipes.  For my 12th birthday, I got to make the cake of my choice.  This was the one I wanted to make, except in purple.  What two colors make purple?  Of course, blue and red  :P  Except when it bakes   :o :o :o  It came out a light army green  :-X :-X :-X  I was horrified, especially since there were a bunch of relatives there  :'( for my birthday dinner.  It tasted fine, but looked awful.

Not really.  There's cocoa powder and vinegar (a very small amount) in there and it creates a reaction to help get the deep red - that and the red food dye.  Beet juice can also be used.

It's not your run of the mill cake.  Very moist, dense, not too sweet and pretty to look at   ;D  The frosting makes it perfect.  It can be either a cream cheese frosting or (my favorite) a fluffy, cooked buttercream frosting which is not at all sweet and soooo creamy

Cheesecake Factory makes good version of Red Velvet Cheesecake. Pretty rocking, though it's too rich for some.

And for "Cake Boss," I prefer Duff and the "Ace Of Cakes" crew myself....:P

cheescake factory has great desserts. haven't been there in forever though.  I used to go to the buckhead one.  It is/was a big restaurant party district here in atlanta

Went to Cheesecake Factory with my work group to celebrate a co-workers new position.  I couldn't eat anything on the menu due to my prep (show is in 18 days) so I had a sugar-free iced tea BUT I ordered this and put in the freezer for the 21st!!!!  :D
