I run a Virtual PC through XP in order to use different operating systems at the same time. Its not really as useful as I thought and will probably be going back to just one Operating System and it will be Windows based.

It's around 5:30 here and I'm starting dinner. I'm cooking a wonderful Tandoori spiced Halibut with cucumbers. If you ever decide to use Halibut make sure the fish is fresh and not frozen-people with refined taste can tell a difference. I'm cutting the cumumbers with a swivel peeler cutting it in long strips. I'm debating making a blueberry and pomegranate fizz. It's a cocktail to die for with a "taste explosion" of fruity champagne. Cheers!

I have the KitchenAid Roto attatchment for big peeling jobs and a Kuhn Rikon Julienne Peeler for some artistic and aesthetically pleasing cuts.

What do you think of this recipe for Oreo Cheesecake? Its supposed to be like the Cheesecake Factory version...

1 1/2 pound cream cheese
1 cup sugar
5 large eggs
1/4 teaspoon salt
2 teaspoon vanilla
1/4 cup flour
8 ounces sour cream
5 Oreo cookies (coarsely chopped for the batter)
10 coarsely chopped Oreo cookies for the topping

Crust
1 1/2 cup Oreo cookie crumbs (about 25 Oreo cookies finely chopped)
2 tablespoon melted butter
9″ spring form pan (buttered on bottom and sides)

Looks like it should come out very well. I will give you a tip though. DO NOT OVERCOOK this or you will have a a cooked Egg mess instead of a smooth custard. I recommend using an Instant Read Thermometer and cook only to 165-170 degrees registers in the center. Any more and you may as well throw the whole fucking thing in the trash.

Yes, I like using the "artsy" peelers for maybe a Christmas Brunch or a special occasion. I'm using a ceramic peeler imported from Germany. It does a superb job and helps the process whenever I'm deveining celery.
